Natural Winemaking philosophy
We are convinced that there are many good reasons for making wine organically and biodynamically, but there is no counter-argument.
How do biodynamic wines differ from conventional wines?
Our biodynamic wines are intimately connected to our estate. Through biodynamic grape growing we allow our vineyard to be the best it can be, so we can make the most authentic wine.
What biodynamic wines means?
The Demeter Wine Processing Standard must also be met. The intent of the Demeter Processing Standards is to minimize manipulation of the ingredients as much as possible to allow for the identity of the Biodynamic agricultural ingredients to come through. We are aiming for undisguised, vintage- based expression of our vineyards.
In our case this means:
▪ No use of artificial or aromatic yeast in alcoholic fermentation
▪ No use of artificial bacteria in maloactic fermentation
▪ No use of enzymes
▪ No acid or sugar adjustment
▪ Sulfur content is below 50 mg/l
▪ Only chlorine-free corks used
▪ No use of chemicals to improve, clarify or stabilise

Our natural wines are officially recognized by the Hungarian authorities (HU- ÖKO-01) as organic, according to EU law.
DEMETER - Download our certification
From harvest 2012 on our wine estate is certified by DEMETER also.
Villány is the first Hungarian wine-growing region to have its own comprehensively controlled guarantee of origin and quality and it exceeds the national classification system.
DHC Villány (= controlled district of Hungary) wines come in two categories: DHC Classic and DHC Premium.
"Colchicum hungaricum" or "Hungarian colchicum" belongs to the Colchicaceae family and grows only on Villány, on the Szársomlyó hill. The flower emblem certifies the DHC Villány classification.
